咖喱面 Curry Noodle

咖喱。。。不管是咖喱面,咖喱鸡,咖喱牛,咖喱饭。。只要有关咖喱都是我的最爱。但本人实在是太懒了,根本没想过要自己动手煮,直到近期物价涨得实在太夸张+外食分量越来越少+新鲜食材被味精取代+。。。逼得我实在不得不自己动手煮。上网google及综合妈妈的意见,煮了这一餐简单的咖喱面。老公满意的说以后可以去摆档了。好满意的一天!

咖喱面食谱Curry Noodle Recipe

 


咖喱汤头Curry Soup
红洋葱 1颗 Red Onion 1pc
葱头仔 10颗 Shallots 10pcs
辣椒干 10~15根 (热水泡软)**根据个人口味,若要辣点就加多辣椒干**
Dried Chillies 10~15pcs (soak with hot water till soft) **amount depend on how spicy u like**
蒜 6辮 Garlic 6cloves
南姜 1小根  Galangal 1small pc
黄姜 1小根  Tumeric 1 small pc
香茅 2根 (切片)Lemongrass 2pc
咖喱粉 2大匙 Curry Power 2tbsp
鸡羊咖喱粉 4大匙 Chicken & Lamb Curry Powder 4tbsp
食油 100ml Cooking Oil 100ml
(以上所有材料放入搅拌机搅碎) (Blend all ingredients in blender) 
鸡高汤 1.5L Chicken Broth 1.5L
(半只鸡+2L水+沙葛半颗,熬两个小时以上)(half chicken + 2L water + half turnips, cook for 2 hour and above)
椰浆 150ml Santan 150ml
咖喱叶 2根 Curry Leave 2pcs
盐 1茶匙 Salt 1tsp
糖 半茶匙 Sugar 1/2tsp
鸡精粉 半茶匙 Chicken Powder 1/2tsp

1. 中火倒入100ml食油然后加入搅碎的材料炒香,转小火慢炒至辣椒油分离(大约5分钟)。
2. 加入咖喱叶继续炒片刻,倒入高汤煮至小滚然后加调味料及椰浆。(若想加豆腐啵,可在这时候加入。)续小火煮10分钟即可。

1. Add 100ml of cooking oil in pot and cook in medium heat, add in blend ingredients and saute. Turn to small heat cook till separate out chilies oil (about 5minute).
2. Add in curry leave, saute for a while, add in chicken broth, santan and seasoning and cook for another 10mins. 

咖喱面配料 Curry Noodle Side Ingredients
豆腐啵 15颗 (切半)
长豆(切段,清炒至熟备用) 
矮瓜 (切片,过油然后小火炒至熟备用)
豆芽 (烫熟)
鸡丝肉 (用熬鸡高汤的鸡胸肉切成鸡丝肉备用)

**以上材料分量适合5~6人分量。**
